Ingredients

  • 1lb 93% ground turkey
  • Small yellow onion, chopped (recipe uses 100g)
  • 1 packet low sodium taco seasoning
  • 3 wedges Creamy Queso Fresco Chipotle Laughing Cow cheese
  • 14.5 oz fire roasted tomatoes (in juice)
  • 1/3 cup whole kernel canned corn, drained
  • 1/2 cup reduced fat Mexican shredded cheese
  • 100g (about 6 tbsp) light sour cream
  • 6 oz elbox pasta, dry
  • Cilantro for garnish

Directions

Boil pasta according to instructions. While pasta is cooking brown turkey. Once turkey has browned add in taco seasoning, coat well, and then add in 3 wedges of laughing cow cheese and mix. Move pan to low heat and add in canned tomatoes (don’t drain), drained corn, and drained pasta noodles. Mix well. Add in sour cream and cheese and mix well until cheese has melted. Garnish with cilantro. Enjoy!
